There has been a lot of buzz about these salted chocolate-rye cookies. So much, that I had to try them. The recipe is from the cookbook Tartine Book No. 3: Modern Ancient Classics Whole. Tartine Bakery & Cafe is in San Francisco and their products use many whole grains. The use of rye flour in the cookies adds a complex flavor, especially paired with chocolate and salt. The cookies are not too rich, with lots of deep flavor, and the texture is unique. I recommend trying them – they’re delicious!
