Eggplant Parmigiana, Positano style



Melanzane alla Parmigiana – Eggplant Parmigiana, so good (recipe here), and easy to make ahead. This version is from beautiful hotel Le Sirenuse, in Positano Italy. It is a nice, light meal – perfect for summer.


The recipe is simple but has style. Look at the flared cut of the eggplant! Great idea because the eggplant is very tender with less skin.


Assembling ingredients – eggplant, light tomato sauce, fresh mozzarella, grated parmigiano cheese, fresh basil.



A delicious meal!
