Oven dried tomatoes


Oven dried tomatoes are really versatile. I have been making them at least once a week and they go fast! Serve them as bruschetta, toss with pasta, or add them to traditional tomato sauce. They add a rich, sweet flavor.  Here is a recipe for Oven-Dried Cherry Tomatoes I really like from Mario Batali’s website.  For a quick version, toss tomatoes with olive oil, herbs, salt, pepper, breadcrumbs, and bake in a convection oven at 375° for about 45 minutes . The addition of breadcrumbs in the recipe gives the final product a nice texture.

Tomatoes bake for 3 hours – but well worth the wait! Serve with a sprinkle of basil and drizzle of extra virgin olive oil.
